TURKEY ENCHILADAS

I need need need to stop overindulging at weekends…I had a brilliant weekend as for once I had both Arabella and Pascal and we went out for meals, went to friend's for a fantastic barbecue, had a brilliant barbecue at home with some other friends…however I drunk and ate enough for about 20 people. So this week I have not been feeling my best! Nor looking my best which is not great as it is soon going to be bikini weather.

So another week and another attempt at healthy eating. Pascal is working non stop at the moment so it was just Arabella and I for supper - I decided I should use up the leftover turkey mince from my Turkey & Chorizo Burgers but had no idea what to do with it. After several hours (literally) on Pinterest I found a healthy-ish recipe that also looked delicious. The only naughty bit was the cheese but I used low fat and wasn't so heavy handed as I normally am.

Ingredients for 2 people:

200g turkey mince
2 tortillas
1 tsp ground cumin
1 garlic clove, crushed
1 tbsp olive oil
2 avocados
100g grated cheese (I used half fat)
12 cherry tomatoes, chopped into small pieces
Half a red onion, chopped
A handful of coriander
Half a lime
Salt & Pepper



Start by preheating the oven to 180 C. I like to do things step by step so I began by making the salsa. I chopped the tomatoes, red onion and some coriander and then mixed it together with half a lime and salt and pepper. 



Heat the oil in the frying pan and then add the garlic for a couple of minutes before putting in the turkey.




Cook for about 7 minutes until it is cooked all the way through and then add the teaspoon of cumin. Once it is cooked add it into a bowl with half the salsa and half the cheese.



When you have mixed it all together, put half the mixture into each tortilla and fold.




Put into a oven proof dish seam side down.



Then cover with the rest of the salsa and cheese.



Finally bake for 12 minutes in the oven or til the cheese has melted and the tortillas are golden.



While these are cooking, mash the avocados in a bowl with a dash of lime and season with salt and pepper.




Serve together and tuck in!


Absolutely amazing - very fresh and tasty. I normally find turkey very bland (I don't even like it at Christmas) but it was extremely flavoursome. Pascal is watching me while I write this and is jealous he wasn't here for supper - I will definitely be cooking these again!
